Sweetcorn is a good source of dietary fibre which contributes to normal laxation. Provides niacin (vitamin B3) which is needed for the release of energy from food and also the B vitamins biotin and folate. Biotin contributes to the maintenance of healthy skin, mucous membranes and hair while folate is needed for the formation of blood cells.
3 sweet corn cobs, husks and silks removed, cooked
Olive oil
200g mini Roma tomatoes, halved
1/2 small red onion, finely chopped
2 Lebanese cucumbers diced
1 cup coriander leaves, roughly chopped
1 Jalapeño chilli, deseeded and finely chopped
1 ripe avocado, peeled, halved and sliced lengthways
2 tbsp lime juice
Cut the cooked corn off the cob and throw into a large bowl with the cucumbers, jalapeño, onion, tomatoes, coriander and season with olive oil, salt and pepper. Add the avocado to the top of the salad and drizzle with a the lime juice.
You can serve this with some tortillas and coco kefir.
