1/2 cauliflower blended in processor to make a rice like consistency
2 sweet potatoes peeled & cut really thin (I used a spirolli to make them like fine spagehetti) pour a little olive oil over them & sprinkle with pink salt & roast for 20 minutes on high in the oven.
1 avacado cut up into small pieces
1 handful of roughly chopped coriander
1 yellow capsicum cut up small
2 Tbsp of hemp seeds
1 pomegranate
Mix all ingredients together & sprinkle with some avacado oil, pink salt & pepper.
