Easy Peasy Pancakes

My kids love my grandma’s pancake’s which my mum makes them all the time. They are fairly easy but take too much time for me when I rushing in the morning so I choose to make these Easy Peasy Pancakes. Just 2 ingredients or 3 if you want a caramel flavour.

Ingredients
– 1 ripe banana
– 2 eggs

Blend these two ingredients together in a blender or thermomix and then pour into a hot oiled fry pan and cook these little protein packed pancake’s.
If you want to add a little caramel flavouring, then just add 1 tsp raw organic mesquite powder to your mixture. Mesquite is a high protein powder which has a great mineral profile with significant quantities of calcium and magnesium. It also contains the amino acid, lysine. It’s low GI of 25 helps maintain stable blood sugar levels. Mesquite has been used a staple food by native American desert dwellers for thousands of years.

You can top these Easy Peasy Pancake’s with either fresh lemon juice and a sprinkle of coconut sugar or some pure maple syrup. Or you can drizzle some homemade Nutella over them.
