Coconut and Lime Curry


Now the colder weather is coming, I like to warm my body up with some warming food such as this delicious curry.

In a big pot
Sauté 1 chopped brown onion
Add 4-6 finely chopped carrots
Add 4 potatoes chopped
2 sweet potatos diced
1/4 cup red curry paste
1 tbsp chilli paste

Sauté for 10 minutes

Now add 2 cans of organic coconut milk
1 can organic coconut cream
2 cups of organic vegetable stock
2 drops of doTERRA Lemongrass oil (if you don’t have, add fresh lemongrass)
1 inch of fresh ginger chopped finely or grated

Simmer until vegetables are soft (approx 30 mins)

Add 1 cup of peas
10 mushrooms sliced thin
Take off heat & add juice of 1 lime
Fresh cilantro & coriander on top & serve with brown or black rice.
