Cake Batter Vegan Ice Cream

Cake batter ice cream

This is super simple and everyone will love it. It also keeps nicely in a sealed container in the freezer.
Dairy free, sugar free, vegan & creamy tasting…..

2-3 medium frozen bananas
1 tsp pure vanilla extract
1 Tbsp organic creamed coconut
2 Tbsp pure maple syrup
1/4 tsp aluminium free baking soda
1-2 Tbsp natural coloured sprinkles (optional- only can get from a few health food places)
2 drops of natural colours of choice (optional- I use a brand called hopper which is 100% natural from fruit & veg concentrate & I used the colour pink)

– Blend all ingredients together except the baking soda and sprinkles. Blend in a good food processor to I used my thermomix for about 10 seconds then scraped sides and blended again for another 10 seconds or until mixture is smooth. Add the baking soda and blend for 5 seconds then spoon mix through the sprinkles.
Serve straight away, or put in a sealed container in the freezer for later.
