Banana nut muffins

Creamy, Sweet bananas are a favourite with most kids & these healthy muffins will definitely keep them happy. Bananas are the best source of potassium, B vitamins & energy giving carbohydrates. Bananas are considered a prebiotic food as they help nourish friendly bacteria in the colon. Walnuts are a good source of omega-3 fats that are needed for cardiovascular health & proper brain function.

Recipe

Preheat oven to 180 degrees

2 cups gluten free flour (you can use normal wholemeal flour if not needing gluten free)

1 tablespoon baking powder

1/2 teaspoon of xanthan gum (this is if you are using gluten free flour)

1 egg

1 teaspoon pure vanilla essence

1/3 cup light olive oil

1/2 cup raw organic honey

1 cup Soy milk (or almond or coconut milk)

1/2 cup walnut pieces

2 large ripe bananas

2 tablespoons of linseeds

– Place all dry ingredients in a large bowl & mix

– Place all liquid ingredients in a bowl & whisk together.

– Pour the wet ingredients into the dry ingredients & gently combine (don’t overmix otherwise muffins will be heavy)

– Gently fold in mashed banana, linseeds & walnut pieces & spoon mixture into 12 large muffin cases.

-Bake for 30 minutes or until golden & then allow to sit for 5 minutes on a cooling rack.
