Who doesn’t like a good old rice pudding?
Growing up my grandma would always make us rice pudding and now tat I married a Greek I have tried many a rice pudding.
This is my version to make it as healty as possible for my kids.
Ingredients;
2 cups of cooked Basmati rice
1/2 tsp pure vanilla powder
2 eggs
3 Tbsp raw organic honey
2 1/2 cups of milk of choice (i love coconut milk)
1 cup raspberries (frozen if not in season)
ground cinnamon
Preheat oven to 180 degrees
Cook rice
Place eggs, honey, vanilla and milk in your blender (i use termomix)
Place rice and raspberries into a baking dish and cover with the blended mixture
Bake in oven for 15 mins then take out and gently stir
Sprinkle with cinnamon and cook for a further 30 minutes (cover with foil if you don’t want the top crispy)
Optional – you can add apple or bananas instead or with the raspberries
